Alpha-Acetolactate Decarboxylase (ALDC)
This product is abstracted from deep fermented microorganism liquor. It is is a special enzyme for beer production .
Theory
ALDC applies in malt beer zymolysis. It catalyzes acetyl lactic acid decarboxylation into 3 - hydroxy -2-butanone to prevent diacetyl come into being. Thereby, malt beer zymolysis phase is shortened or ignored.
Effection
Shorten or saved fermentation maturation time, improve the output of beer.
Reduced the content of diacetyl and α-acetolactic acid so that the beer flavor be improved and character stability be ensured.
Definition of unit
ADU (α-acetolactate decarboxylase unit: u/ml) is the amount of enzyme which by decarboxylation of α-acetolactic acid to get 1 ug 3- hydroxy -2-butanone in 1 min. Under standard reaction condition.
